1/4 c. olive oil
1 t. salt
1 t. ground cumin
1/2 t. nutmeg
2 t. fresh lime juice, plus a squeeze for
2 1/2 lbs. sweet potatoes, sliced and par-cooked until firm tender
1-2 scallions, chopped
1/4 c. fresh cilantro or parsley leaves, minced
Preheat grill to 450 degrees. In a small lidded container combine oil, salt, cumin, nutmeg and lime juice. Shake well and set aside. Brush potatoes with a little olive oil and grill until they are nicely browned and tender. Remove and layer on a serving platter. Top with scallions and cilantro. Re-shake dressing and spoon over potatoes. Finish with a squeeze of fresh lime juice and season to taste. Serve hot or cold.
For a sweet and crunchy addition, sprinkle dressed potatoes with toasted pecans. To add spicy zing to the dressing, add one chopped chipotle chili in adobo sauce.
