Crispy Seared Tofu

Serves 2-4
1 15 ounce package of extra firm tofu
Cornstarch for dredging
Kosher salt
Drain the tofu blot dry. Cut into 1/4 inch slices and blot one more time to ensure it's fairly dry!
Heat the oil in a non stick or cast iron skillet. While the pan heats take the tofu sprinkle each slice with a little kosher salt. Next dredge the tofu into the cornstarch, pressing lightly and begin frying. Don’t attempt to move the tofu around until it begins to move easily when shaken. Turn and continue frying until the tofu is a crisp golden brown . Remove and drain on paper towels.
This tofu is delicious on sandwiches or ‘dressed’ any number of ways.
