1 Box Ziti or pasta of choice
2 cups grape tomatoes sliced in half
1½ cups baby arugula
1 cup basil leaves, coarsely chopped
½-3/4 cup red onion diced
1½ tablespoons of good quality balsamic vinegar
¼ cup olive oil
1/2 -1 cup of pine nuts, toasted
Salt and fresh black pepper
To a large bowl add the vinegar and red onions, stir well and let stand for about 10 minutes.
Bring a pot of salted water up to a boil and add the ziti.
Next add the tomatoes, basil, arugula to the balsamic onion. Add half of the oil. Sprinkle in about a teaspoon of kosher salt and combine. Gently mix as you would a salad, to coat all the veggies with the dressing. While the pasta is cooking occasionally fold the veggies.
Drain the pasta, quickly, don’t rinse and add to the bowl. Fold gently bringing the veggies up from the bottom to the top of the pasta, until well combined. Add the pine nuts, and give the pasta a final mix. Season with more salt if necessary and plenty of black pepper. Serve warm or at room temperature.
