Makes 3-4 sandwiches
Ingredients: 1 large sweet potato, peeled and sliced into 1⁄4” rounds
6-8 slices whole grain bread
Thin slices of red onion
Thick slices of ripe tomato
1 avocado, sliced
Chopped lettuce
Your favorite hummus as a spread
To prepare: Drop the sweet potato pieces into boiling water and cook for 8-10 minutes, just until the pieces are fork tender. Remove from the water and allow to cool for a few minutes.
Lay out bread slices side by side. Assemble sandwiches by layering red onion slices, then tomato, avocado, and finally the slices of cooked sweet potato onto the bottom bread, then top with chopped lettuce.
On the top piece of bread, spread about a tablespoon of hummus. This is a thick sandwich, so a good press on the top slice of bread will help it stay together.
Enjoy with a dill or sweet pickle spear on the side.
I have always been of the opinion that a hearty sandwich and a steaming bowl of soup or stew make a complete meal. This sandwich also packs well for a lunch even in warm weather as there are no dairy toppings or additions that may turn rancid.
