1 1/2 lbs. zucchini, cut into ¼” or ½” dice
2 c. cherry tomatoes, cut in half
1/4 c. olive oil
2 T. fresh lemon juice
Salt and pepper to taste
1 minced shallot
1/4 c. minced fresh mint
1/4 c. minced fresh parsley
1 c. pitted green or black olives
Place zucchini and tomatoes in a large bowl.
Whisk together oil, lemon juice, salt, and pepper. Add the minced shallot, parsley, mint, and olives and stir together. Pour over the zucchini and tomatoes and fold until well blended.
Let the salad rest for at least one hour then serve.
This savory crunchy salad is wonderful accompanied simply with garlic bread or spooned over pasta or quinoa for dinner. It’s also great with our Tofu Scramble.
